Carrot Pachadi is a kerala dish.Pachadi is a dish which is made with curd. It can be made with other vegetables or fruits like beetroot, yellow cucumber,pineapple,banana.
INGREDIENTS:
•Carrots – 2
•Yogurt- 1 bowl
•Grated coconut- 1/2 bowl
•green chillies – 3 to 4
•curry leaves – few
•cumin seeds- 1 tsp
•mustard seeds – 1 tsp
• oil
METHOD:
•Boil carrots.Let it cool down and grind it to paste form.
•Beat curd well and keep it aside.
•Mix grated coconut ,cumin seeds,green chillies and little water and grind it to paste.
•In a vessel heat oil,add mustard seeds , cumin seeds,dry red chilli and curry leaves.Let it splutter.
•Add ground carrots and coconut mixture and mix well.
•Add curd and salt and mix. Just let it heat do not boil.
•It can be served with rice.
