INGREDIENTS:
- Chicken pieces: 100 gm ( 5 to 6 pieces)
- Red capsicum: 1/2 cup
- Yellow capsicum: 1/2 cup
- Baby corn : chopped 1/2 cup
- Cherry tomatoes: 2 halved
- Iceberg lettuce: few chopped
- Cabbage: finely chopped 1/2 cup
- Carrot: finely chopped 1/2 cup
- Celery: few chopped
- Mint chutney : 2 tbsp
- Yogurt: 2 tsp
- Garlic : 1 tsp finely chopped
- Apple cider vinegar: 1 tsp
- Honey: 1 tsp
- Dried Oregano: 1/2 tsp
- Dried thyme: 1 tsp
- Chilli flakes: few
- Black pepper powder: 1/2 tsp
- Olive oil
- Salt for taste
- Butter: 1 tsp
PREPARATION:
- Boil chicken pieces with salt and garlic pieces.
- In a bowl mix together mint chutney , yogurt and chicken pieces.
- Grill it with little olive oil.
- In a pan heat little butter and add chopped red and yellow capsicum and baby corn and saute for 2 to 3 mins.
- In a bowl add all the chopped veggies and sauteed veggies and add cider vinegar, honey, dried herbs , chilli flakes, pepper powder and mix well.
- Finally add chicken pieces and serve.
