This recepie is a innovative dish by me.Ragi is the main ingredient which is healthy and nutritious. Veggies are sauteed and made into pockets and then deep fried. You can even bake these pockets.
Preparation time : 15 mins
Cooking time: 30 to 40 mins
Serves: 4
INGREDIENTS:
For covering:
- Ragi flour: 1 medium sized cup
- Maida/ refined flour: 2 tbsp
- Wheat flour: 1 small cup
- Baking powder: 1 tsp
- Oil
- Water
- Salt: for taste
For filling:
- Bell peppers ( yellow , red , green): 1 small cup finely chopped each
- Carrot: 1 small cup finely chopped
- Corn kernels: 1 small cup
- Garlic: 1 tbsp finely chopped
- Paneer: 1 small cup grated
- Cheese: 1 small cup grated
- Pepper powder: 1 tsp
- Chilli flakes: 1 tsp
- Salt: for taste
- Tomato sauce: 1 tbsp
- Red chilli sauce: 1 tbsp
- Olive oil: 1 tbsp
PREPARATION:
- Mix all the ingredients given under ‘ for covering’ and knead well into dough.
- Cover and keep aside.
- Heat oil in a wok, add garlic and saute.
- Add carrots and saute for a minute.
- Add bell peppers and saute for 2 to 3 mins.
- Add black pepper powder and salt and toss well.
- Now add grated paneer and mix well. Add tomato ketchup and red chilli sauce.
- Add grated cheese finally and toss well.
- Keep aside to cool for 5 to 10 mins.
- Now make chapati like rolls out of the dough made before.
- Cut it into equal rectangle sheets.
- Place the stuffing in centre and apply water on all 4 edges.
- Cover it with another sheet and seal and make indentations with fork on all sides as shown below.
- Keep it in refrigerator for 5 to 10 mins.
- Remove from refrigerator.
- Heat oil in a deep wok and deep fry the puff pockets until it turns crisp and brown.
- Serve with mayo dip or tomato ketchup.
