DRIED PRAWNS KADHI .. this is an innovative recepie made with dried prawns. Dried prawns are made into fried balls or pakoras and the gravy is called kadhi or Spiced yogurt to which the pakoras are immersed and its served in pineapple to give a rich flavour of pineapple to the gravy.

INGREDIENTS:
To make dried prawn balls or pakoras :
•Dried prawns: 1 cup coarsely ground
•Onion: 1 finely chopped
•Green chillies: 2 finely chopped
•Ginger garlic paste: 1 tsp
•Turmeric powder: 1/4 tsp
•Red chilli powder: 1/2 tsp
•Ajwain /Carom seeds: 1/2 tsp
•Coriander leaves: 1 tbsp chopped
•Besan /Gram flour: 2 tbsp
•Salt: for taste
•Oil : for frying
To make Kadhi / Spiced yogurt:
•Yogurt : 3 tbsp
•Besan / gram flour : 1/2 cup
•Water: 3 cups
•Salt: for taste
•Red chilli powder: 1/4 tsp
•Turmeric powder: 1/2 tsp
•Dry red chilli: 1
•Curry leaves: few
•Cumin seeds: 1/2 tsp
•Kasoori methi: 1/4 tsp
•Oil: 1 tbsp
PREPARATION:
•To make Prawn Pakoras, In a bowl mix together coarsely ground dried prawns, onion, turmeric powder, red chilli powder, ajwain, green chillies, ginger garlic paste, coriander leaves, besan and salt and just add very little water and mix.
•Make small balls out of the mix.
•Heat oil in a kadai, deep fry the balls till golden brown and drain and keep in absorbent paper.
•Now to make the gravy, In a bowl mix together besan, yogurt, red chilli powder, turmeric powder and salt. Add 3 cups of water and mix. The consistency now should be very thin and watery as the gravy will thicken while cooking.Keep this aside.
•Heat a kadai, Add 1 tbsp of oil.
•Add cumin seeds, let it splutter. And add curry leaves, dried red chilli and toss.
•Add the yogurt and besan mix to this and cook on medium flame .
•The gravy will become thick and the raw smell of besan will go off .
•Check for salt and add the fried prawn balls and dried kasoori methi and give it a mix.
•To make the pineapple plate, slice the centre portion and cut it into cubes and scoop it out to make it hollow.
•Now pour the kadhi along with balls into the scooped out pineapple.
•You can even add pineapple chunks to the gravy instead of serving in pineapple plate.
