Porkum Kaaya Roast

Porkum Kaaya Roast.. Kerala style Pork roasted with raw Plantain with good amount of spices especially crushed black pepper and dry roasted.. This is the first time I tried cooking pork.. While cooking pork we need to take care of few things to cook it perfectly and I followed the same and ended up with a delicious side dish which I served with Puttu ( Steam cake ) for my family and they enjoyed it !!

INGREDIENTS:

For Pressure cooking :

  • Pork: 1/2 kg
  • Ginger garlic paste: 1 tbsp
  • Kashmiri chilli powder: 1 tbsp
  • Turmeric powder: 1/2 tsp
  • Coriander powder: 1/2 tbsp
  • Black pepper powder: 1/2 tbsp
  • Salt: 1 tsp

For gravy:

  • Shallots: 1/2 cup
  • Raw Plantain: 2
  • Ginger garlic: 1 tbsp crushed
  • Fennel seeds: 1 tsp
  • Onions: 3 sliced
  • Green chillies: 2 slit
  • Curry leaves: few sprigs
  • Turmeric powder: 1/2 tsp
  • Kashmiri chilli powder: 1/2 tbsp
  • Coriander powder: 2 n 1/2 tbsp
  • Black pepper powder: 1 n 1/2 tbsp
  • Garam masala powder: 1 n 1/2 tbsp
  • Salt: as required

PREPARATION:

  • Clean,chop and wash the pork pieces. Drain and keep aside.
  • Add the pork pieces and spices mentioned under for pressure cooking into the pressure cooker and mix with your hands.
  • Pressure cook for 2 whistles and let the pressure settle down before opening.
  • Heat oil in a wok ( add less oil as pork has good amount of fat content) .
  • Add shallots and crushed ginger garlic and fennel seeds and saute till it turns soft.
  • Add sliced onions, green chillies, curry leaves and salt and saute till onions turn brown and soft.
  • Add all the dry spice powders and mix.
  • Sprinkle some hot water gradually and mix everything well.
  • Add the leftover stock and let the masalas cook well till oil separates.
  • Add the Raw Plantain pieces ( slightly peeled and chopped and soaked in water). Mix with the masala and cover and cook for 10 mins.
  • Add the cooked pork and cook on high flame for 10 mins covered and open the lid and simmer for 15 to 20 mins on low flame.
  • Finally sprinkle some crushed pepper and curry leaves and give it a mix.
