My first icing experiment with cupcakes.. And I really enjoyed it π©βπ³π
Someone asked me If I could bake cupcakes for her daughter’s first birthday. And at first I was not sure If I should commit for this. And then finally I thought to give it a go. And here is the result.

Preparation time: 20 mins
Cooking time: 15 mins
Serves: 12 nos.
INGREDIENTS:
For Cupcakes:
- Plain flour: 1 n 1/2 cups
- Granulated sugar: 2/3 cup
- Eggs: 3 large
- Milk: 1/4 cup
- Baking soda: 1/4 tsp
- Baking powder: 1 tsp
- Salt: 1/4 tsp
- Cocoa powder: 2 tbsp
- Cinnamon powder: 1/4 tsp
- Vanilla essence: 1 tsp
- Choco chips: 1/2 cup
- Vegetable oil: 1/2 cup
- White vinegar: 1 tsp
- Paper liners: 12
For Frosting:
- Confectioners / Icing sugar: 2 cups
- Unsalted Butter: 1 cup at room temperature
- Vanilla essence: 1 tsp
- Milk: 2 tbsp
PREPARATION:
- Pre heat the oven at 180Β°C for 20 mins.
- In a bowl, whisk together oil and granulated sugar with vinegar using hand whisker or stand mixer.
- Add eggs one by one to this and whisk till fluffy.
- In another bowl, sieve together plain flour,baking powder,baking soda, cocoa powder and salt.
- Divide and add this gradually to the whisked egg mix and whisk the dry ingredients on low speed .
- Add milk simultaneously.
- Add vanilla essence and give it a mix .
- Mix 1 tsp flour with the choco chips and add this to the batter.
- Mix with the spatula. The batter is ready.
- Place paper liners in the cupcake tray.
- Pour batter to 3/4 th level. Bake for 12 to 15 mins at 180Β°C.
- Remove from oven, let it cool completely.
- Meanwhile, whisk together butter and icing sugar on high speed for 5 mins.
- Add vanilla essence and milk and whisk till peak appears or till you get the thick creamy consistency.
- Fill this in an icing bag with desired nozzle.
- Decorate the cupcakes with frosting and chocochips and serve.
