Serves: 4
INGREDIENTS:
For Marination:
- Mushrooms: 2 cups
- Plain flour: 3/4 cup
- Corn flour: 3 tbsp
- Ginger garlic paste: 1 tbsp
- Kashmiri Chilli powder: 1 tsp
- Turmeric powder: 1/4 tsp
- Black pepper: 1 tsp crushed
- Salt: as required
For Gravy:
- Onions: 1 cubed
- Capsicum : 1 cup cubed
- Garlic: 1 tbsp finely chopped
- Ginger: 1 tsp finely chopped
- Celery : 2 tbsp finely chopped
- Spring onion greens: 2 tbsp finely chopped
- Soy sauce: 2 tbsp
- Tomato sauce: 1 tbsp
- Red chilli sauce: 1 tbsp
- Vinegar: 1 tsp
- Sugar: 1 tsp
- Corn flour: 1 tsp
- Salt: as required
- Oil: 4 tbsp
PREPARATION:
- Chop the mushrooms into halves or quarter pieces.
- Marinate with the ingredients listed above for 30 mins.
- Heat oil in a wok, deep fry the battered mushrooms till golden and crisp. Drain and set aside.
- Heat oil in a pan, add celery, ginger and garlic. Toss for few seconds.
- Add cubed onions and capsicum, toss on high flame for 2 to 3 mins.
- Add some salt and crushed black pepper, sauté and add the sauces. Mix well on low flame.
- Mix 1tsp corn flour in a cup of hot water, add this to the gravy .
- Cook till the gravy thickens.
- Finally add the fried mushrooms and mix to coat well in the gravy.
- Sprinkle spring onion greens on top to garnish.
