In this recepie, Marinated chicken drumsticks are shallow fried and cooked in gravy prepared using Indian spices and condiments.

Serves: 5

INGREDIENTS:

  • Chicken drumsticks: 10
  • Onion: 4 finely sliced
  • Tomatoes: 2 finely chopped
  • Ginger garlic paste: 1 n 1/2 tbsp
  • Yoghurt : 2 tbsp
  • Turmeric powder: 1/2 tsp
  • Kashmiri chilli powder: 2 n 1/2 tbsp
  • Cumin coriander powder: 2 tbsp
  • Chicken Masala powder: 2 tbsp
  • Bay leaf: 2
  • Cinnamon stick: 1 small piece
  • Green cardamom: 3
  • Cloves: 3
  • Curry leaves: few sprigs
  • Coriander leaves: 1 tbsp finely chopped
  • Salt: as required
  • Oil: 4 tbsp

For Marination:

  • Turmeric powder: 1/2 tsp
  • Kashmiri chilli powder: 1 tbsp
  • Ginger garlic paste: 1/2 tbsp
  • Salt: as required
  • Oil:for shallow frying

PREPARATION:

  • Marinate the chicken drumsticks with the ingredients listed above . Set aside for 15 to 30 mins.
  • Heat oil in a pan for shallow frying.
  • Fry the drumsticks till both sides turn light brown and tender.
  • Drain and set aside.
  • Heat oil in a wok, add cardamom, bay leaf, cloves and cinnamon stick and give it a toss.
  • Add onions with some salt and sauté till golden brown.
  • Add ginger garlic paste and sauté till the raw smell goes off.
  • Add the dry spice powders and mix well till oil separates.
  • Add finely chopped tomatoes and cook till it turns soft and mushy.
  • Lower the flame and add yoghurt and mix well.
  • Finally add the fried chicken pieces and mix.
  • Cover and cook on medium flame for 15 mins.
  • Garnish with coriander leaves and keep it covered for some time before serving.
