Introducing another chicken recepie from my kitchen ” CoCo Chicken ” . As the name says the ingredient which gives the recepie its actual flavours is coconut milk and coconut oil.

RECEPIE:
Preparation time: 2 hours
Cooking time: 45 mins
Serves: 4
INGREDIENTS:
For Marination:
- Coconut Milk: 3/4 cup or 200g
- Turmeric powder: 1/2 tsp
- Coriander powder: 1 tbsp
- Garam masala powder: 1 tbsp
- Pepper powder: 1 tbsp
- Salt: for taste
For Sauteeing:
- Chicken: 1/2 kg
- Red onions: 1 large sliced
- Green chillies: 3 to 4
- Garlic: 10 to 12 cloves
- Ginger: 1 small size
- Garam masala powder: 1 tbsp
- Pepper powder: 1 tbsp
- Curry leaves: as required
- Green Cardamom: 2
- Cloves: 2
- Coconut oil: 4 tbsp + 1 tbsp
PREPARATION:
- Marinate chicken pieces with coconut milk, turmeric powder, coriander powder and salt. Keep aside for 2 hours. You can also keep it overnight.
- Heat a pan, add coconut oil. Add green cardamom n cloves n toss for few seconds.
- Add crushed ginger , garlic and green chillies and saute till the raw smell goes off.
- Add marinated chicken and mix well, keep sauteeing for 2 to 3 mins and cover and cook on medium flame for 15 to 20 mins, stirring intermittently.
- When the chicken is soft and tender, increase the flame and let the moisture in the pan dry up.
- Meanwhile mix sliced onions and curry leaves with hands and add this to the chicken and mix .
- Add garam masala and pepper powder and keep sauteeing till the consistency is thick and creamy.
- Finally add a tbsp of coconut oil and some more curry leaves and keep it covered for some times before serving.
