#recepieoftheday This is one of my favourites in Indochinese cuisine and I love to have it with fried rice.. VEG CRISPY .. as the name says the veggies are dipped in batter and deep fried to crispy fritters , gravy prepared with sauces and corn flour slurry and the fried veggies are tossed it without losing the crispiness.

Serves: 5
INGREDIENTS:
*Onions: 1 + 1 cubed
*Carrot: 1 cubed
*Bell peppers: Cubed 1 cup
*Broccoli florets: 1 cup
*French beans: 1/2 cup chopped
*Garlic: 1 tbsp chopped
*Ginger garlic paste: 1 tsp
*Plain flour: 1 cup
*Corn flour: 2 + 1 tbsp
*Salt: as required
*Black pepper powder: 1 + 1 tsp
*Soya sauce: 2 tbsp
*Green chilli sauce: 1 tbsp
*Tomato sauce: 1 tbsp
*Spring onion greens: 1 tbsp
*Olive oil: 4 tbsp
*Vegetable oil: for deep frying
PREPARATION:
*Prepare thick batter by mixing together plain flour, 2 tbsp corn flour, ginger garlic paste, salt , black pepper powder and enough water.
*Mix in all the veggies in the batter.
*Heat oil for deep frying.
*Drop in the marinated veggies into the oil and deep fry till golden and crisp. Drain and set aside when done.
*Heat olive oil in a wok, add garlic and cubed onions , toss on high flame for 2 to 3 mins.
*Add some salt and crushed black pepper and toss .
*Now add the sauces and saute. Make corn flour slurry by mixing 1 tbsp corn flour in 1/4 cup of water and add this to the gravy.
*Cook till the gravy thickens.
*Add the fried veggies to the gravy and toss on high flame for another 2 to 3 mins.
*Finally add some chopped spring onion greens and it’s ready to serve.
