Indochinese food has always been my favourite cuisine, be it vegetarian or non vegetarian. Getting the gravy sauce right makes the Indochinese food perfect.
In this recipe I have coated the soy chunks with flour and few spices and shallow fried, prepared the Indochinese gravy sauce and tossed the fried soy chunks in the sauce.

Serves: 3 to 4
INGREDIENTS:
- Soy chunks: 2 cups
- Red onion: 1 cubed
- Green Capsicum:1 cubed
- Garlic:1tbsp finely chopped
- Ginger: 1tsp finely chopped
- Spring onion whites:1tbsp
- Green chillies: 2 sliced
- Soy Sauce: 1 n 1/2 tbsp
- Red Chilli Sauce: 1tbsp
- Tomato Sauce: 1tbsp
- White vinegar: 1tsp
- Corn flour:1tbsp
- Sugar:1tsp
- Black pepper powder:1tsp
- Salt:to taste
- Spring onion greens:1tbsp
- Vegetable oil: 2tbsp
For frying:
- Plain flour:1 tbsp
- Corn flour: 1tbsp
- Kashmiri chilli powder: 1tsp
- Black pepper powder:1tsp
- Ginger garlic paste:1tsp
- Soy sauce:1tbsp
- Salt:1tsp
- Vegetable oil: 1/2 cup for shallow frying
PREPARATION:
- Heat water in a saucepan, add salt. Add the soy chunks and bring it to boil. Turn off the heat. Drain into a colander. Squeeze out the water from the soy chunks. Transfer to a bowl.
- Add the ingredients mentioned under “For Frying” and mix well to coat the soy chunks.
- Heat oil for shallow frying. Add the soy chunks in batches and shallow fry till it turns golden brown and crisp. Drain and keep aside.
- Heat a wok, add 2tbsp of oil , you can use the same oil used for frying the soy chunks,
- Keep the heat on medium and add ginger,garlic,spring onion whites and green chillies to the wok. Toss quickly without getting it burnt.
- Next add onions, sauté till it turns pink. Add the capsicum and sauté for 2 to 3 mins.
- Add salt and pepper and toss. Lower the flame and add the sauces.Stir well.Add sugar and mix.
- Now add the corn flour slurry ( 1tbsp of cornflour mixed in 1/2 cup of water).
- Mix continuously as the sauce starts to thicken, add more hot water if the sauce is too thick and lumpy. When the sauce is of desired consistency, add the fried soy chunks and mix well.
- Add vinegar and mix. Finally add the spring onions greens and mix well. Serve hot !
